Please take a look at how we use categories in our Theme Packs, you will notice that we use the to:

1. Group items in the back end: (pages/modules/blog): so you can see a clear picture and your site contents organised
2. Subcategories: use nested categories when creating a blog so you can create multiple categories for a blog.
3. Multi-item views, so you can have multiple galleries in a same page. We are preparing the multi-item view for JKit 4, it was implemented in JKit (as you can see in this example: https://themes.cloudhotelier.com/boutique/en/hotel). We will implement multi-item views very soon in JKit 4, expect to be released with this month theme.
